Tom Ruddle Professional Cookery Apprentice of the Year


Tom, 27, recently completed his Level 2 Apprenticeship and has been chosen as Professional Cookery Apprentice of the Year by his Training Coordinator, Sam Cini.

Tom started working at Broome Manor Golf Club in 2003 as casual staff and by 2004 was promoted to Catering Manager, he is now Head Chef. During his time at the club, Tom has so far completed two NVQ Level 2s in Hospitality Services and Management.

Tom had been discussing studying for an Apprenticeship for a while and due to a restructure within the company, he was able to pursue this. He says:

The Apprenticeship is hard work but I’m enjoying learning new cooking skills. I have to juggle studying with working and looking after my three small children but I love being back in the classroom once a week and, as I’m the most experienced, I have taken on a mentoring role to others in the group.

Tom’s manager Jean-Paul Wyburn said:

Over the past year Tom has grown and developed in his new role as Head Chef and he shows fantastic commitment and enthusiasm, always striving to support other members of staff in their roles. Tom has great ideas and isn’t afraid to put them forward to change anything that could work better.

Tom would like to go on to study for his Level 3 with his current employer and hopes he can be instrumental in growing the business.
